From across the plateau region of Popáyan, 67 select farms comprise this regional blend - aptly named Popáyan Reserve.
This decaffienated version of Popáyan Reserve uses the Sugar-Cane process to remove 99.99% of all caffeine with the help of local decaffeination company - Descafesol.

Descafesol has been producing high-quality decaffeinated coffees since 1992 when it first started production in the city of Manizales, Caldas.
Descafesol is a 100% Colombian-owned company that makes use of the fully natural Sugar Cane process to decaffeinate coffee.
In most tropical fruits (and sugar cane), the compound Ethyl Acetate is formed and is responsible for the breaking down of caffeine.
During the Sugar Cane process, the Ethyl Acetate rich water produced as a by-product of sugar cane production is collected and used for this process. Coffee beans are steamed to open up their pores then soaked in this Sugar Cane water which breaks down the caffeine within the coffee beans.
Once the caffeine has been broken down, the beans are steamed gently to remove any residual Ethyl Acetate before being dried and packed for exportation.
