Rukago is managed by Sinabajije Abdoul Karim and works closely with 889 dedicated farmers from the surrounding hills—Rukago being one of the most prominent.

About the process
About the process
Fermented for 72 hours under shade, the process fosters a complex anaerobic reaction. Once complete, the remaining juice is drained, and the cherries arecarefully dried on raised African beds. The drying process is closely monitored—adjusting airflow, coverage, and stacking based on years of hands-on experience.
For Lot 841, the drying stage lasted 43 days, resulting in a beautifully complex and clean profile. Once the ideal moisture content is reached, the coffee is rested for at least a month before being dry milled and hand-sorted one final time before export.
